- Honey Date & Yogurt Muffins
Line muffin tins with paper muffin cases. Mix together a beaten egg,
200g of Rozbert goat's milk yogurt, 125ml of goats milk, 50g of melted
Olivio and 75ml of clear honey. Pour onto 225g of self-raising flour,
5ml of bicarbonate of soda, 50g of medium oatmeal, 125g of chopped dates,
75g of light muscovado sugar, 2.5ml each of both mixed spice and nutmeg
and a pinch of salt. Stir until just blended. Divide mixture between muffin
cases and bake at 200¼c (400¼C) gas mark 6 for 17-20 minutes.
